Chalet Head Chef - Seasonal - Portes du Soleil, France

We're looking for a creative and ambitious chef to create their own menu to impress and delight the guests. In this role you will have total ownership of all areas of the kitchen involving menu design, budget control, ordering, stock control, cooking and presentation. You will be working together, as part of the chalet team, to oversee all aspects of running one of our client's luxury chalets. You will be expected to establish and maintain a warm and friendly atmosphere within the chalet, so that guests can enjoy the high standard of personal service.

Responsibilities
  • Menu Design – create interesting, creative and flexible menus according to guest requirements
  • Canapes each evening (6 nights)
  • 4 course meal including cheese (knowledge of French cheeses)- On 6 nights
  • Afternoon Tea each day
  • Breakfast each day
  • Kids dinner
  • Chef’s tasting menus/ themed evenings for special occasions
  • Pre trip calls with guests- bespoke menu design, dietary requirements etc
  • Responsible for the cleanliness of the kitchen, attention to hygiene standards
  • Cleanliness of storage areas
  • Stock control
  • You will be responsible for all the chalet shopping. The chalet hosts will provide you with lists for cleaning products and other chalet items.
  • You will shop in Bourg once a week, usually on a Monday, assisted by another member of the chalet team.
  • Relationships with suppliers in resort e.g. Cash, Fish supplier, Butcher etc
  • Keep eye on food cost and seek ways to economise
  • Purchasing food for staff meals
  • Deep cleaning of the kitchen
  • Prepare shopping list for Monday shop
  • Prep for the week ahead
  • Assist chalet team with deep cleaning of communal areas
  • Ensuring the chalet is ready, warm and welcoming for the incoming guests on their arrival
  • Afternoon tea/Canapes for guest arrival
  • Breakfast/sandwiches for guest departure
  • Resort driving- if needed to assist collecting guests
  • Snow clearing
  • Maintaining the chalet vehicles and keep clean, clear of snow
Ideal Candidate
  • Creative and ambitious chef
  • Previous high-end catering experience, ideally in a private setting such as a home, chalet, villa or yacht
  • EU / UK passport
  • Clean driving license
  • Excellent references
Package
Salary: €1600 per month

Accommodation. You will have your own room

All of your food and drink within the chalet

A lift pass for the Espace Killy area

Insurance to get you off the mountain (EU nationals only)

Staff skis

Phone

Your transfers to and from the airport at the beginning and end of the season

Up to €100 towards your return journey home
